flourless banana bread recipe and modified it a bit to make it my own. As stated on their website,
"This recipe is gluten-free, grain-free, dairy-free, soy-free, paleo, and sugar-free!" My second revision is vegan too!
Recipe for banana bread muffins:
Ingredients: (makes 12 muffins)
3 ripe bananas
1/2 cup peanut butter
3 eggs
3 tablespoons ground flax seed
3 tablespoons chia gel (mix 9 tablespoons of water with 3 teaspoons of chia seeds and let sit for 20 mins. The seeds will puff into a gel)
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla extract
1/2 cup chopped walnuts
Preheat oven to 350 degrees F. Mash bananas and mix everything in a large bowl. Bake for 1 hour or until toothpick comes out clean.
Recipe for vegan banana bread:
Ingredients: (makes 1 loaf)
3 ripe bananas
1/2 cup peanut butter
3/4 cup unsweetened apple sauce
3 tablespoons ground flax seed
Mix 9 tablespoons of water with 3 tablespoons of chia seeds and let sit for 20 mins. The seeds will puff into a gel.*
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla extract
1/4 cup chopped walnuts
*note this is way more chia seeds than the muffin recipe. It was originally because I accidentally used a tablespoon instead of teaspoon, but I went with it and it turned out okay - more moist and crunchy. If you don't like that then stick to the 3 teaspoons instead of tablespoons.
