It's necessary to communicate your needs to the people you love. Sometimes I forget that my thoughts are silent to the public. I'm learning how to sift my thoughts into words. 

On another note, it's time to raise the standards and keep persevering. Character takes time to build. Stick to the process.

Recipe: Coconut flour cocoa berry pancakes


Ingredients: (makes 9-10 pancakes)
1/3 cup coconut flour
4 eggs
3 tablespoons melted butter
1 tablespoon honey (optional)
1/2 teaspoon salt
1 teaspoon vanilla extract
1 tablespoon unsweetened 100% cocoa powder
1/2 teaspoon baking powder
Berries of choice (I used about a handful of blueberries & raspberries)

Mix everything in a large bowl. I've mentioned before that I use a stainless steel pan so the pancakes tend to stick to it and burn easily. I use olive oil to line the pan and cook on medium-low heat. Cook each side for about 2-3 mins or until brown. Eat plain or add on your topping of choice - I usually go for some natural unsalted peanut butter or honey. You can also boil some berries and make your own sauce to pour on top!

Recipe: Non-vegan banana muffins & vegan banana bread

I came across this awesome site: www.spoonfulofsugarfree.com and I can't wait to try more of their recipes. Everything is 100% healthy & natural, with no refined sugars! I took their flourless banana bread recipe and modified it a bit to make it my own. As stated on their website, "This recipe is gluten-free, grain-free, dairy-free, soy-free, paleo, and sugar-free!" My second revision is vegan too!  

Recipe for banana bread muffins: 


Ingredients: (makes 12 muffins)
3 ripe bananas
1/2 cup peanut butter
3 eggs
3 tablespoons ground flax seed
3 tablespoons chia gel (mix 9 tablespoons of water with 3 teaspoons of chia seeds and let sit for 20 mins. The seeds will puff into a gel)
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla extract
1/2 cup chopped walnuts

Preheat oven to 350 degrees F. Mash bananas and mix everything in a large bowl. Bake for 1 hour or until toothpick comes out clean.


Recipe for vegan banana bread:


Ingredients: (makes 1 loaf)
3 ripe bananas
1/2 cup peanut butter
3/4 cup unsweetened apple sauce
3 tablespoons ground flax seed
Mix 9 tablespoons of water with 3 tablespoons of chia seeds and let sit for 20 mins. The seeds will puff into a gel.*
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla extract
1/4 cup chopped walnuts

*note this is way more chia seeds than the muffin recipe. It was originally because I accidentally used a tablespoon instead of teaspoon, but I went with it and it turned out okay - more moist and crunchy. If you don't like that then stick to the 3 teaspoons instead of tablespoons.
